Damn!! Its been over 8 years since my trip to Oil Nut Bay, a 300 acre private community….
…..only accessible by boat or helicopter in the British Virgin Islands.
Eight years ago the development had just started, no houses had been completed yet, but several were under construction…..
I’ll be honest, I thought my master plan I call “The Great Escape” would be accomplished by now…
…and I’d already be down there living “The Dream”, all chilled out, living that upscale, sustainable organic lifestyle!!!
But that’s OK, life has not taken a toll on me. This is the stage of life where living a healthy lifestyle pays dividends…..
And the “Master Plan” is in full throttle, and it’s gonna happen….
So, I’d better save off these 10 tropical style chicken recipes for when I make it down there ….
Because “The Dream” is still alive……. yep 🙂

The Healthy Chef’s “healthy morsel”: Very good recipe with organic ingredients, one note being, as pertains to the soy sauce in the recipe, I try to avoid soy at all times. But I keep this homemade “soy sauce alternative” recipe on file(or figure out a way to do the recipe without it)

The Healthy Chef’s “healthy morsel”: Decent recipe, except where it simply says “oil” in the recipe. My number one healthy eating rule for myself and others is to NEVER eat or cook with any oil except Coconut Oil (a VERY Healthy Oil), or Olive Oil!!!

The Healthy Chef’s “healthy morsel”: with organic ingredients and a pasture raised chicken from Whole Foods or elsewhere, this recipe is 5-star healthy as it is. I like to see recipes still using tried and true olive oil, as opposed to Vegetable Oils such as Crisco and Wesson, or my arch enemy, toxic, poison Canola Oil.

[below] Coconut Lime Chicken
The Healthy Chef’s “healthy morsel”: It’s personal choice , but I like to do this type of recipe with chicken thighs as opposed to chicken breasts. The Fatty thighs make for a more savory skillet. Don’t be afraid of fat from high quality meats, poultry and fish.
