One of the tricks I mentioned in My Top 10 Ways to Lose Bodyfat, Cellulite, and Weight, is to create healthy and tasty versions of your favorite junk foods, so there is no reason to ever go back.
I could write on and on about this, but make these fries once, and taste the first one….and I won't have to say anything else…………….
You can either bake or fry them, in Heart Healthy Coconut Oil, I actually prefer frying to get that "real French Fry" taste.
The caveat is Coconut oil is so expensive and you might prefer baking and only have to use a little Coconut Oil on the baking sheet.
healthy herb fries
3 pounds red potatoes cut into wedges
(avoid non-organic potatoes because they are high in pesticides)
1/2 cup chopped fresh rosemary
1/2 cup chopped fresh thyme
Pink Himalayan Salt, preferably from a Salt Grinder
(AVOID COMMON TABLE SALT, or the whole point of healthy eating is defeated!!!)
optional: I like a little coarse ground black pepper on mine
Organic Unrefined Coconut Oil for frying (or baking)
(AVOID CANOLA OIL and Vegetables Oils like Wesson, or you will be missing the point and purpose of healthy eating)
You also shoot yourself in the foot if you are using store bought ketchup or BBQ sauce. Those store bought ketchups and bbq sauces are notorious for High Fructose Corn Syrup, and other "mystery ingredients", that store themselves as bodyfat, and are perhaps one of the top causes of childhood and teen obesity.
These fries are so good, you might find you don't need ketchup or sauce. Nonetheless, you can propel your healthy junk food replacements to the next level if you start making your own sauce.

The fastest way to get started with healthy eating is stop cooking with any oil EXCEPT coconut oil.
I know it has been put in our heads that all saturated fats are bad for you, but that is actually a myth put out by big business to promote their cheaper, more toxic oils like Crisco, Wesson, and the
worst, unhealthiest food scam of all time, Canola Oil.

You already know how to cook fries, but I gotta write instructions for the sake of the "legal obligations" writing recipe instructions 🙂
Heat coconut oil to about 350 (before it starts to smoke). Then fry the wedges again (in batches) until golden brown. It seems to work better for me in a large pan with less potatoes so the potatoes have plenty of room in the pan.
However, a large pan requires more coconut oil, which is not cheap. I learned to use less coconut oil by not requiring the potatoes to be covered in oil, they don't have to float, but you have to keep turning with a spatula.
These fries are also great baked on a baking sheet with a little coconut oil (this helps you use less coconut oil, though I prefer them fried in skillet), use your spatula or give the baking sheet a horizontal shake occasionally to make sure they don't stick to the pan.
Drain on paper towels and toss with herbs and grind out some Pink Himalayan Salt immediately.
Pink Himalayan Salt with its 84 minerals in perfect balance is a totally different animal than unhealthy table salt (which is just processed sodium and iodine). As a caveat, even many sea salts are processed salt just like table salt. (get Celtic Sea Salt if you must get one)
I don't know why it is, but what "sets these fries out", is when right after you remove them from the oil, use a Pink Himalayan Salt grinder [photo above] to salt them …… they are incredible!!!! Trust me, you will never go back to "junk food fries" again….I guarantee it!!!!!
This plain Ol' French Fries post is probably the most important post and recipe in my blog so far as my eating philosophy. For me, its not about trying to force yourself to eat rice cakes and carrots, its about working with what you always liked….
….and making it with the healthiest, highest quality ingredients. In this way, trying to eat healthy is not such a psychological pain. If eating no longer is fun and enjoyable, then what's the point?
