Stuffed Baked Sweet Potatoes

Sweet potatoes are kinda like this nutritional powerhouse that seems to just be sitting out there unutilized, except, as in my family, on Thanksgiving and Christmas.

The good thing about making stuffed sweet potatoes is that I can go vegetarian when I want, and I can stuff with some quality protein when I want. I just listen to my body, it always tells me what to do on a given day. And I trust it………..

Here is my recipe for stuffed sweet potatoes with my current stuffings (from the original recipe), with a few suggestions and list of personalized stuffings I want to try in the future.

Stuffed Sweet Potatoes

……..with my current stuffings (more suggested stuffings listed further down)

* 2  organic sweet potatoes, scrubbed clean
* 2 oz grass fed sheep’s milk feta cheese, cut into small cubes , to find grass fed products near you

* 2 oz black oil-cured olives, pitted and chopped
1 oz olive oil packed sundried tomatoes; thinly sliced (or altenately diced organic tomatoes)

* 1/4 cup (1 handful) chopped fresh organic parsley
* 1/2 teaspoon dried or 2 teaspoons fresh organic basil; chopped
* 1 Tablespoon organic extra virgin olive oil
*
Pink Himalayan Salt (or alternately Celtic Sea Salt) AVOID TABLE SALT!!!!
* freshly ground organic pepper to taste

Instructions

Preheat the oven to 400F. Pierce each sweet potato several times with the tines of a fork. Place them directly on middle oven rack with a piece of foil on the rack below. Bake until the sweet potatoes are easily pierced with a knife and cooked through, about 45-60 minutes depending on size. Remove from oven and let stand until cool enough to handle.

While the sweet potatoes are baking, make the topping. Mix together remaining ingredients in a small bowl and set aside until the sweet potatoes are done. Slice sweet potatoes lengthwise down the center to expose cooked insides, top with feta mixture and serve.
