Pumpkin Seed Nut Bread

I never had to force myself to get off refined sugar and artificial sweeteners, once I started consuming natural sweeteners, my taste buds started to reject excessive sugar…..it happened very naturally for me, with no effort, an no need to fight sugar cravings. 

I love to have a loaf of this type of healthy/delicious pastry around, because is a great "filler" when I need a quick snack, it gives me energy as opposed to taking it away. Also, it is great to throw a slice in the backpack when I am out and about

Plus once you get your recipe right, this Pumpkin Seed Nut Bread simply tastes ridiculously good.

Pumpkin Seed Nut Bread

I like to soak my nuts and then dehydrate for better digestion, read article here

1/2 cup organic pecans
1/2 cup organic walnuts
1/4 cup sliced organic almonds
1 cup organic pumpkin seeds

1 1/2 cup almond meal
1/4 teaspoon Pink Himalayan Salt
1/2 teaspoon baking soda
1/4 cup organic coconut flakes
3 pasture raised eggs

1/3 cup pasture raised egg whites
1/3 cup melted unrefined coconut oil

1/4 cup pumpkin puree (or ½ mashed banana)

Original recipe calls for 2-5 tablespoons quality raw honey, depending on how sweet you want it (list of fake honey is here)

…..might have to find a honey that doesn't burn when baking otherwise use a quality Stevia, but be careful since some stevia has other horrible ingredients like GMO corn maltodextrin , more info here

 

Instructions

Preheat oven to 340 degrees. Line a loaf pan with parchment paper [optional] and grease with coconut oil (Or grass fed butter).

In a food processor, pulse half of the pumpkin seeds until finely chopped and almost a “meal-like” consistency.

Combine all dry ingredients including pulsed pumpkin seeds in a large bowl.
In a small bowl, whisk together remaining wet ingredients.

Add wet to dry and mix until incorporated.
Pour batter into loaf pan and spread evenly into the corners. Bake for 45-50 minutes or until fully cooked through.

Remove from oven, pull the bread out by the ends of the parchment paper and transfer to a cooling rack. Slice and serve once cooled. 

Note: Since raw Pumpkin Seeds are great for prostate health I like to "imbed" a bunch of pumpkin seeds into the top of the loaf while it is cooling, when I feel like it, since the heat [probably] destroys the enzymes of the baked pumpkin seeds
