Soak Your Nuts……..

….is the intentionally provocative and humorous title of the new book by Karyn Calabrese, Holistic Health Expert, writer, restaurant owner, plus more, out of my former hometown of Chicago, Illinois (p.s. she's almost 60 years old on that book cover, unbelieavable!!!!).  I have learned to always be open minded and continue to take advice as well as give it, and after soaking my cashews in Pink Himalayan Salt Water, I swear I will never go back.

As much as I love my cashews, they have always caused me some slight bloating and stomach digestive discomfort when I eat a decent amount, but Karyn was right, the soaking totally eliminated that issue.

In a nutshell, no pun intended, nuts have what are called enzyme inhibitors. These enzyme inhibitors can make nuts difficult to digest by the average human. Soaking them will break down those inhibitors, allowing the nuts to be more effectively digested and processed by the body's digestive system.

Instead of soaking in straight water, I soak mine them in a Pink Himalayan Salt Sole, in order to not only give the nuts an awesome salty flavor, but to add the benefits of the 84 minerals that naturally occur in Pink Himalayan Salt. Himalayan Salt is an entirely different animal than table salt, which I never use, since table salt has all the natural minerals processed out, with all that remains being about 97% sodium, and 3% iodine and other toxic chemicals used in the refinement process.

Anyhoo, I use a food dehydrator to dry my nuts slow at low temperature, because food dehydrator can dry at temperatures as low as 95 degrees, thus allowing nuts to remain totally raw.

When nuts are dried at temperatures above 110 degrees, they are no longer considered raw. Although I will note here that most cashews are not truly raw, in that during the processing of the cashew, they are heated to temperatures up to about 160 anyway. However, when I want to spend the money, I can find truly raw cashews at this link, and I do make sure to have my dehydrator set to 100 degrees or less. Takes the better part of a day to totally dry out my cashews. Although not a vegan like Karyn, I do utilize nuts quite a but for snacks and such, and her suggestion to soak my nuts makes them an even more potent, but tasty snack that I'm somewhat addicted to. ~dw~
