They say that there are two things that a man knows are meant for him as soon as he lays his eyes upon them. The first is the woman that he knows he is going to marry. I’m still waiting to see if that one is true. The second is the piece of land where you want to build your house and live your life. That second one is definitely true, as I found out when I took a trip to the British Virgin Islands in 2011.

 

I stayed on hotel on a private island called Scrub Island, within the chain of islands that make up the British Virgin Islands. I stayed on Mainsail Resort while on Scrub Island,  just down there hanging out, as well as doing some "pre planning" style real estate shopping just in case my “ship came in” in 2011. The ship hasn’t come in, but it will.......soon.

The Mainsail Hotel happens on the side of Scrub Island where the breeze is blocked by the hills. However, one of the first days I was there, I was taking a casual walk, to see the north end of the island.

 

Wham!! As I turned the corner to the north end of the island (last photo below), the breeze hit and the whole scene was magnificent. I noticed a half build house overlooking North Beach, all by itself. The 9 or 10 completed custom built houses, the hotel, and the marina were back around the corner from whence I came. In the first big picture above, you can see the house on the right side of the picture, just above the road.

I found out that the builder no longer had the funds to finish the house. Well, one man’s trash is another man’s treasure. I walked through the overgrown grass up to the house, looked over North Beach, and said “This is it. This is where I’m gonna live”. The Scrub Island realtor showed me the floor plan to the house, and there is an awesome space that would make a perfect outdoor kitchen.


My mind immediately goes into overdrive thinking about the awesome outdoor meals I could make. So, in this entry in my “Wanderlust Food Diaries” I am going to prepare an outdoor meal, in my brand new outdoor custom tropical kitchen. This divine creation will be West Indies Style Curry Chicken.

West Indies Style Curry Chicken

Organic Coconut Oil or Olive Oil(AVOID CANOLA OIL and vegetable oils such as WESSON, they are poison!!!)

1 (3 pound) pasture fed chicken, cut into pieces
Organic Jamaican Allspice (pimento) seeds
Organic Onions
4 large organic potatoes - peeled and cubed
Organic scallions
1 Organic Scotch Bonnet Pepper

 

4 Organic garlic cloves 1 tsp Ginger, preferably fresh cut
Fresh Thyme
1 Chicken Bullion Cube
1 tsp Fresh Ground Organic PepperOrganic 2 tablespoons Pink Himalayan salt
1/4 cup Jamaican curry powder

Ingredients will vary depending on recipe and personal taste, see video for instructions

Island hopping would be cool for food shopping also. There is an organic farm on Tortola (the main island), called Good Moon Farm. Yea!!!!!! Shopping for fresh vegetables to make those masterpieces in that outdoor kitchen. I will creating my own organic garden and orchard as well.

The thought of stepping out and picking fresh fruits and veggies in my own organic orchard, now that what I’m talking about. The beauty of the home being situated above North Beach is that it's going to seem like my own private beach much of the time because there are so few people are over on that side of the island.

Thus, the whole scene is often gonna feel like I own my own private island, but all I have to do is walk around the bend in the road and have all the amenities of a five star resort,  marina, grocery store, and so forth. It’s the perfect set up for me. All I have to do the play my hand right in my business endeavors, and that’s where I’ll be.
