Although my DNA is 100% Afro-Caribbean at the core….

I've always had this fascination with Euro-Style and Euro-Living …..

Back in my 20's I was doing everything in my power to move to Europe, though I still don't truly know why…..

…..I had a vision of some quaint, older building with a true Euro-Feel to it, but still with my much required sense of "American Modernism".

It's actually still in my plans and on my "Bucket List", though not to move over there permanently, but perhaps an extended vacation of perhaps 4-6 months (AirBNB.com Extended Stay Lodging makes that practical)……

I can seem myself now, making a cool Sunday Brunch-Breakfast for some Cutie-Pie, saying "whatever" to her over breakfast conversation, in my cool "American Accent" ……

…and of course, a Michael Franks music playlist playing, which is the norm for me every lazy Sunday Morning.

This apartment in Goteborg Sweden, is totally "Bagging and Tagging" that vision , it definitely "Speaks to Me"   ……yep 🙂

The Healthy Chef's "healthy morsel":  To "flip" this recipe to healthy, I'd use Pink Himalayan Salt, replace processed sugar with Coconut Palm Sugar, organic flour, and only consume pasture raised eggs and milk (Whole Foods has them).

The Healthy Chef's "healthy morsel":  Both recipes, with organic ingredients, are nearly perfect. But, for recipe below, I'm not personally a fan of Almond Milk, because of "questionable" ingredients. I use full fat coconut milk. For pancakes, stick to real maple syrup ONLY, or the whole purpose of healthy delicious eating is defeated!!!!

The Healthy Chef's "healthy morsel":  For recipe above, I just hate they use "cooking spray" in the recipe. I'd suggest Heart Healthy Coconut Oil to grease down your waffle iron. For recipe below, get grass fed cheese and pasture raised eggs (Whole Foods has them), organic sweet potatoes, and you're good to go.

The Healthy Chef's "healthy morsel":  So far as bread is concerned, I was grain/gluten free for two years, but have lightened up a bit because  gluten issues may actually be glyphosate pesticide they spray on non-organic wheat, not the wheat itself. I just try to find a quality bread (example here)
