Home Cookin’ !!! Hearty Breakfast Skillets in “The Land Down Under”, Coorabell, Australia

On the menu:
Egg Skillet Baked in Tomato-Paprika Sauce
Sweet Potato, Avocado, and Ground Meat, and Egg Skillet
Baked Egg Skillet with Spinach, Ricotta, Leek and Char-grilled Peepper

I guess I can blame those old Foster's beer commercials for putting in my head the Aussie's reputation for wanting everything big, bold, and hearty.

True or not, if I were down there in this nice modern homestead in Coorabell, Australia, after a morning game of Rugby with my homeboys, I'd definitely have to cook us up one or more of these skillets, something hearty for the "Aussie Party" …..yep 🙂

The Healthy Chef's "healthy morsel": Love it when I find recipes using the Very Healthy Coconut Oil. Coconut oil can replace any oil in a cooking recipe (Doesn't taste like coconuts. To me it taste "neutral and clean")

The Healthy Chef's "healthy morsel": With the milk in this recipe, I totally avoid conventional Dairy. Whole Foods always has a few brands of Grass Fed Milk, just ask one of the workers. I think many issues such as breast cancer are tied to commercial dairy

WARNING!!!! "Cheesy" 80's Video Alert!!!!

Men at Work: "The Land Down Under"

Don't ask me why (LOL!!!), but one of my favorite songs back in college (That's what cheap beer will do to you)
ENJOY!!! (if you can stomach and 80's video)….while you browse the post………

….about the crib

Zaher Architects wanted to create a modern, stylish and interesting home with a welcoming approach. First, they wanted it to  sit lightly on the land, be open, airy and age well.

They did not want ostentatious or to ‘make a statement’. As the site is very windy, it requires two decks — one sheltered from the north-east wind and the other sheltered from the south-west wind.

The end result was modern home which capitalizes on the views — two outdoor decks, both of which face the views — and a sheltered courtyard. The U-shape plan consists of an open living area and two bedroom wings.

The tomato and eggs recipe at the top is a variation of Shakshouka. I made this recipe once using colorful bell peppers.
A similar recipe can be found here: http://toriavey.com/toris-kitchen/2010/07/summer-2010-travel-blog-shakshuka/ and there is definitely more information on Wikipedia.

Thanks for the comment and the link, I will save it, in that I always looking for ethnic and geographical specific recipes for my “theme” articles.  ~stay healthy~
