Home Cookin’ !!! African Stew 3 Ways at an “Awesome, African, Ashanti” home in Cape Coast, Ghana

On the Menu:
West African Fish Stew
Simple African Chicken Stew
African Peanut Stew with Greens

I remember talking to an African cab driver (who actually had PHD degree) back in Chicago, we were talking about Africa, and he comment that "All of Africa is not just grasslands, jungle, desert, and mud huts"

This sharp, eco friendly crib, called Villa Amina in Cape Coast, Ghana in Africa, 70 or so miles west of the capital Accra definitely proves the point that African architecture is moving into the 21st century.

I can smell the fresh spices in these "Easy – Peezie" African Stews cooking right now…………

The Healthy Chef's "healthy morsel":  You can get pastured chickens from Whole Foods. Avoid common table salt and use Pink Himalayan Salt or alternately Celtic Sea Salt.  Be aware that some sea salts are refined and processed.

The Healthy Chef's "healthy morsel":  I hate to post a recipe that uses toxic Canola, but I like this recipe, and my must remind to  AVOID CANOLA OIL ….its poison!!!!. Canola is one of the worst and unhealthiest foods ever introduced into the food supply in spite of its positive advertising campaign. Canola has never been used in traditional African cooking, or any other culture either, cause it was invented 40 years ago.

….about the Crib

Benin-based architect Pascal De Souza recently completed this beautiful eco villa situated in Cape Coast, Ghana.

This villa is a new concept, using solar energy. The swimming pool is a bio one.

The goal was keeping the trees.

It is made with palm concrete and isolation in ceilings with grass.
