Style Points!! Ginger Mango Chicken en Papillote

…..a.k.a., "Chicken in a Bag"

If you are cooking for someone and/or having a "Cook Together Date", then you should try cooking Chicken en Papillote, translated, that's "Chicken in a Bag".

Why? It's such a simple way to add "Style Points" to what might have been a generic Chicken Breast meal, and the steam is a great way to "Juicy" up those potentially dry chicken breasts (especially if you add a little wine)

Here is a good recipe for Ginger Mango Chicken en Papillote……

Ginger Mango Chicken en Papillote (Chicken in a Bag)

1 lb of boneless, skinless pasture raised chicken breasts
(I AVOID CONVENTIONAL CHICKENS, if you can't get pasture raised, then at least get USDA organic chicken)

1 organic mango, peeled, pitted and sliced
1 inch piece of fresh organic ginger, peeled and cut into match sticks
1/3 cup of organic cilantro leaves

1 organic jalapeno pepper, thinly sliced
4 teaspoons of extra virgin olive oil (AVOID
CANOLA OIL)

Pink Himalayan Salt, or alternately Celtic Sea Salt (AVOID COMMON TABLE SALT)
Coarse ground organic black pepper
1 organic lime cut into 8 wedges

Directions

Preheat oven to 400 degrees. Cut four pieces of parchment paper, about 18 inches long. Cut chicken breasts in half, horizontally.  Lay 1/4 of the mango slices in the center of each piece of parchment. Top with 1 piece of chicken, 1/4 of the ginger and jalapeno.

Season each serving with salt and pepper and drizzle each piece of chicken with 1 teaspoon of olive oil. To fold the packets, pull up the sides of the piece of parchment paper and bring them together over the chicken. Fold the edges together and down, creating several small folds. You’re essentially rolling the parchment down over the chicken.

Fold the ends under or twist them together TIGHTLY (If steam leaks out cooking, you will have wasted your time!!!!). Place the folded packets on a rimmed baking sheet and bake for 20 minutes. When serving, carefully open packets (there will be steam, so use caution) and squeeze lime wedges over chicken
