a.k.a., Great Gameday Gridiron Grilling!!!
Summer is over, and henceforth, so is my "Dressed to Grill" segment of the blog until next summer, but the grilling doesn't end for me this fall and winter.
With that million dollar renovation almost complete right outside my "rinky-dink" studio apartment in Seattle, with gas grills and so forth, I should be able to spend the whole fall and winter making some great Football Season treats.
Here is a recipe for Cajun Salmon Skewers…….
Home Made Cajun Seasoning
(I'm not a big fan of store bought because of poor ingredients and high sodium from cheap salt)
1 tsp. Pink Himalayan Salt, or alternately Celtic Sea salt (avoid Common table salt at all costs!!!!)
2 tsp. organic garlic powder
2.5 tsp. organic paprika
1 tsp. organic coarse ground pepper
1 tsp. organic onion powder
1 tsp. organic cayenne pepper
1 1/4 tsp. organic oregano
1 1/4 tsp. organic thyme
1/2 tsp organic red pepper flakes, optional
I'm sure it goes without saying that you have to "play around" with your measurements for your ingredients, in that everyone has different tastes
Directions: mix/shake ingredients and store in an airtight container
Cajun Salmon Skewers
Wild Caught Alaskan Salmon filets, cubed (AVOID FARM RAISED SALMON!!!)
Cajun spices or herbs of your choice
roasted vegetables (go here to see how veggies are roasted in a balsamic Vinaigrette)
lemon or lime juice
cracked black pepper
a drizzle of olive oil
Instructions: Coat the salmon cubes in Cajun spices and thread on pre soaked bamboo skewers, alternating with roasted peppers or vegetable of choice.
Cook for a few minutes on each side, remember salmon cook pretty fast .
Serve with a drizzle of olive oil (No Canola oil Pleeeeeze), cracked pepper, and a good squeeze of lime juice.
I don't drink a whole heck of a lot of beer, maybe a 10-20 bottles a year, but I love this smooth Italian beer I found a while back called Peroni.
My eating philosophy is the opposite of the "overly disciplined" health gurus, in that I have one (or two) whenever the mood hits, which may be 5 or 6 times or so a year (my body doesn't like too much alcohol)……
This kind of treat always bring forth good news and bad news……..
The good news is I always get to observe the power of quality food in front of family and friends, when they bite into real food with organic ingredients. They always give that infamous, "mmmmmm".
The bad news? All three of my brothers are over six feet tall and they can put down some food. So when feeding those guys on Football Sunday, they eat me out of house and home.
