“Dressed to Grill”: Healthy Delicious Summer Grilling Tips and Recipes

On the Grill Today: Rotisserie Terodactyl Bird…….uh, I mean Rotisserie Chicken

The million dollar renovation right outside my "rinky-dink" studio apartment in Seattle is almost done.

Taking a peek inside one of the Kenmore gas grills,  I saw a Rotisserie. It actually gave me a "Pavlovian" type salivation, because I am such a fan of the Quality Rotisserie chickens at Whole Foods.  I can sit up watching a movie or game, and eat half a Whole Foods Rotisserie chicken.

So this "Dressed to Grill" will get me prepped for some "slow cooked" Rotisserie creations that I plan to hook up out there on the Mezzanine. Oh….and of course I have another batch of my "culinary porn" for my cult followers, more spectacular Custom Outdoor Kitchens.

Actually, I'm not a big believer in "overloading" rotisserie or roasted chicken with lot of spices. When you get to eating real pasture raised chickens, you will find there is so much natural flavor in the juices, that a lot of "fancy-smancy" over-spicing is not really necessary.

The Whole Foods out here in Seattle carry a locally pasture raised chicken, although very small, like a Cornish hen, but it's taste is to die for, and I don't really spice it up that much at all.

 

However, I won't leave the recipe lovers hanging, using my baseline recipe for oven roasted Pasture Raised Chicken, here is my recipe for Rotisserie Chicken ……………

Rotisserie Chicken

Pasture Raised Chicken (The ones I get will allow you to not have to use excessive spices)

Pink Himalayan Salt (or alternately Celtic Sea Salt, AVOID COMMON TABLE SALT!!!)

Coarse Ground Black Pepper

Optional Additional spice (if I feel like it, like a little garlic powder or Thyme)

Olive Oil For Brushing

Directions

Preheat the grill to medium-high. Brush the chickens with oil and season the outside and cavities with salt and pepper.

Skewer the chickens onto the rotisserie rod and grill, on the rotisserie, for 30 to 35 minutes, best to use food thermometer to insure internal temperature at least 165F

Remove from grill and let rest for 10 minutes before serving.
