“Dressed to Grill”: Healthy/Delicious Summer Grilling Tips and Recipes

On the Grill Today: Grilled Lemon Salmon Skewers

When family and friends ask me what is the one "ordinary food" they should eat all the time for health ….my answer, "Wild caught Alaskan Salmon"

This food is a treasure trove of health and healing nutrients, such as Vitamin D, Omega 3 fatty acids, and much more. As "sciency" as that sounds, some people, like myself, are addicted to the great taste of Wild Caught Salmon.

Although I could write a cookbook on 100 Ways to Make Salmon, I will present just one Simple Summer Salmon Skewer recipe here, along with another batch of my "culinary obsession", one of my end goals in life,  Custom Outdoor Kitchens, in this segment of "Dressed To Grill".

Grilled Lemon Salmon Skewers

** 2 tbsp chopped fresh organic oregano
** 2 tsp organic sesame seeds
** 1 tsp ground cumin

 

** 1/4 tsp crushed organic red pepper flakes
** 1-1/2 pounds skinless wild salmon filet, cut into 1-inch pieces (AVOID FARM RAISED SALMON)
** 2 organic lemons, very thinly sliced into rounds

 

** olive oil or coconut oil for grates
** 1 tsp Pink Himalayan Salt or Celtic Sea Salt (AVOID COMMON TABLE SALT)
** 16 bamboo skewers soaked in water 1 hour

Directions

Heat the grill one medium heat and spray the grates with oil.

Mix oregano, sesame seeds, cumin, and red pepper flakes in a small bowl to combine; set spice mixture aside.

Beginning and ending with salmon, thread salmon and folded lemon slices onto 8 pairs of parallel skewers to make 8 kebabs total.

Brush the fish lightly with oil and season with salt and the reserved spice mixture.

Place on grill for 8-10 minutes, remember salmon cooks fast.

If I can throw in one quick healthy "tidbit", salmon is one of the few food based sources of vitamin D, important since  which Vitamin D deficiency is linked to cancer, diabetes, and host of other diseases. Read more on vitamin D here.
