I realized as much as I love salmon (no exaggeration, in any given month over the past 5 years, I eat it no less than 26 out of 30 days), just realized I don't have any salmon recipes on the blog.
This recipe is to help with my "withdrawal symptoms" from football season, when I would make a hearty meal like this "Salmon Skillet", sit up all morning, watching NFL Sunday on ESPN, not even thinking about taking a shower until 3pm (hope that's not T.M.I.)
Also, the recipe seems like a lot of work but it is really not, especially when taking your time on a lazy Sunday morning, I'm just prepping the ingredients, sipping organic coffee, looking up at the TV, watching ESPN Football Sunday, that's living!!!!!!.
Breakfast skillet with Salmon, Eggs, Potatoes, and other good stuff!!!!!
3 medium-large Organic potatoes (Yukon luv Gold)
12oz more or less organic white cabbage, thin sliced
4 spring onions (scallions), trimmed and thinly sliced
6-8 oz Wild Caught Alaskan Salmon, smoked or raw
Pink Himalayan Salt (AVOID TABLE SALT)
Organic freshly ground black pepper
2-3-or-4 pasture raised eggs
Organic Olive oil
Garnish of choice, like Organic Watercress leaves and chives
Organic Lemon wedges to serve
DIRECTIONS
Pre-heat oven to 350˚F.
If salmon is raw, bake partially done (you have to feel that out as salmon will cook further when all ingredients mixed). I'm not a fan of over cooked salmon. If smoked, see below.
Peel Potatoes and rinse. Cut into quarters length-ways, so you have 4 long pieces, turn sideways and cut 4 or 5 times into bite-sized pieces. Add to a pot of Pink Himalayan salted water and bring to the boil, then reduce heat to medium and simmer for 20-25 minutes or until just soft in the center when tested with a small, sharp knife. Drain, shake up lightly in the colander to fluff up a little, set aside.
While potatoes are simmering, half fill another medium-sized pot with lightly salted water and bring to a boil over high heat. When boiling add the thinly sliced cabbage, reduce heat to medium-high and simmer for 2-3 minutes, drain. Heat 1 tablespoon of olive oil in a large, cast Iron skillet (any large skillet will do), when hot add the par-cooked cabbage along with the sliced scallions and fry over high heat tossing often. Do this for 3-4 minutes until slightly crispy. Remove from the pan and allow to rest on paper towel. Add another tablespoon or two olive oil to the same frying pan, when hot add the potatoes and fry until golden on all sides (30-35 mins tossing often).
Add the cabbage and onions to the fried potatoes along with the smoked salmon – flaking it in evenly. Make 3 slight indents in the ingredients and crack an egg into each one. Continue to fry over medium heat for 10-12 minutes before transferring to the hot oven until eggs are cooked as per your liking (around 10-12 minutes for cooked whites and runny yolks, I mostly prefer to scramble my eggs then add). Keep an eye on the pan in the oven to ensure the eggs and Salmon get cooked the way you like them ~ you may need to cook them a little longer or shorter depending on your oven.
Serve hot garnished with watercress leaves, snipped chives and a good seasoning of freshly ground black pepper. You can also drizzle with a little lemon infused extra virgin olive oil and/or lemon wedges (optional).
