Mango Chicken Burgers

I love those meals that look like they were a grand production, but In reality are very simple to make. Mango Chicken Burgers falls into that category.

The struggle for me with these types of creations is the breads. I still have not evolved to consistently making my own bread so I have to search hard for a store bought bread that works for be where I am with my eating regiment.

So far as breads, everyone will go by their own preferences. I know everyone doesn't think as hard on it as me and that's cool. I have become fond of Sami's Bakery breads I found online. Their Millet and Flax bread is awesome and contains the following ingredients:
Sami's Bakery Millet and Flax Bread Ingredients: Organic Millet Flour, Brown Rice Flour, Water, Aluminum Free Baking Powder, Sea Salt, Organic Grounded Flax Seed, Cultured Brown Rice Flour, Ascorbic acid.

 

Mango Chicken Burgers

- pound pasture raised ground chicken
-1 cup fresh organic mango, finely chopped
-1/3 cup fresh organic cilantro, chopped
-1/3 cup  organic red onion, finely chopped
-2 teaspoons fresh organic jalapeno, (seeds & stems removed) minced

-1 1/2 teaspoons Caribbean (or Caribbean Jerk) seasoning
-1 organic garlic clove, minced
-1 teaspoon fresh lime zest
-organic coconut oil

-1/4 cup plain organic yogurt
-Bread of Choice, I prefer
Sami's Bakery Millet and Flax Bread
-Toppings (personal choice): I like Romaine Lettuce, mango slices, onions, grass fed cheese sometimes, but whatever floats your boat,

1. Place chicken in a large mixing bowl. In a separate small bowl, mix together yogurt, mango, cilantro, red onion, jalapeno, Caribbean seasoning, garlic, and lime zest until well combined. Gently stir yogurt mixture into chicken being careful not to over mix and compact meat. Form into 4 patties.
2. Add a little coconut oil to pan or griddle over medium-high heat. Place patties in pan and cook about 3-5 minutes per side or until cooked through. Add toppings of choice.

Makes 4 Burgers

The chicken mixture can be a little moist and hard to form into patties. If you have that problem, you can divide the mixture into 4 balls then place the balls on the heated pan and use your fingers to flatten it. Don’t mess with the patties too much once they’re cooking because they will break apart the more you mess with them.

Chicken can be substituted with turkey.
