Sweet Potatoes are a very impressive superfood that I used to not get to eat until the holidays.

However, to take advantage of this delicious, nutrient packed veggie on a more consistent basis, I learned to make Baked Garlic Sweet Potato Wedges. I like the taste of this treat because the garlic flavor balances out the sweetness of the potato.
Baked Sweet Potato Wedges
–1 or 2 organic garlic cloves (or garlic salt)
–Organic Virgin Olive Oil
–Pink Himalayan Salt
–Organic coarse ground black pepper
–Organic Sweet Potatoes cut into wedges similar to steak fries
It works better for me if you have a large skillet that you can bake in. This allows you to saute the garlic in olive oil and add the wedges straight to the pan.
Smash and chop garlic and saute in olive oil. Add more Olive Oil to pan as needed. Add sweet potato wedges. .
I like to swish the potatoes around in the olive oil on all sides, so that the sides of the potato that do not touch the pan will have a light coat of oil, and the olive oil will cook in to the potato.
I use a salt grinder and pepper grinder to add Himalayan Salt, and pepper to potatoes while cooking. Experiment with other seasonings, but I try not to over do it with the spices. I like to garnish with green fennel leaves becaue it prevents bloating and has a great taste. I cook at about 350 and do a taste test to determine when done.~dw~
